1 cup orange juice

2 tablespoons soy sauce

2 garlic cloves, crushed and minced

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons freshly grated ginger, divided

1 tablespoon fresh tarragon

1 cup orange marmalade

2 tablespoons champagne vinegar

Instructions:

Place the tenderloin in a slow cooker and season with salt and black pepper.

In a bowl, combine the orange juice, soy sauce, garlic, and 1 tablespoon of ginger. Mix well and pour over the pork. Cover and cook for 6 hours on low heat.

A few minutes before serving, combine the tarragon, orange marmalade, remaining ginger, and champagne vinegar in a saucepan. Heat over medium until the sauce bubbles slightly.

Reduce heat to low and cook for 5-10 minutes.

Serve tenderloin sliced with the gingered marmalade sauce drizzled on top.
